How to make salted kumquat

1. Prepare some clean glass jars with lids, and you must ensure that there is no dirt or grease in the containers.
2. Select those kumquat with whole intact and no blemishes
and leave the stems on. Pulling the stems can sometimes can injure the peels.. cleaned with boiled hot water. Make sure there is no grease or dirt on kumquat. Lay them out to air dry.
3. On the bottom of the glass put in a layer of coarse salt, then put the first layer of kumquat, and then add coarse salt again. The salt should surround the kumquats. When a layer is completed, you can continue to use the same method to do another layers until all kumquats have been covered with salt in the jar.
4. Repeat with other jars.
5. When the salt has turned into liquid, pour them out and replace with new coarse salt.
6. Finally, the lids of the bottles can be tightened, and store in a cool place more than six months.

 

The reason to use coarse salt because they contain magnesium chloride , which is a very good dehydrator.

After they absorb moisture they will turn into liquid. Then you can replace the salt with new salt. You can do this 2 or 3 times.
