Aspergillus
Aspergillus
flavus and Aspergillus oryzae look very similar to each other and their DNA
almost are 100% similar. They are both belong to the group aspergillus section
flavi.
Aspergillus
flavus produces cancer causing agent, aflatoxin (黃麴毒素),
which is the
strongest cancer causing agent discovered to date. Eating food contaminated with
the aflatoxin creates a high probability of getting liver cancer. Aspergillus
oryzae is a traditional fermenting agent used in soy sauce, wine and other food
produced with fermenting process. It had been difficult to diferentiate A.
flavus from A. oryzae using the physical characteristic of the fungi before the
introduce of AFLP (Amplified Fragment Length
Polymorphism ) method, invented
by KeyGene, a biotech company based in Wageningen, Holland. The technique is now
merchandised under license agreement by Perkin Elmer.
